You’ll need… 1 egg 1 tsp olive oil 1/2 tbsp plain yogurt 2 egg yolks 1/4 cup sugar 1/6 cup cake flour 1 cup milk, warmed 2 strawberries 6 blueberries confectioners’s sugar mint
Let’s get Cooking… In a bowl, combine pancake mix, 1 egg, olive oil and yogurt. Mix to make a dough. Bring ingredients together into a ball. Divide dough into 8 and roll into individual balls. Arrange the balls of dough onto a skillet and bake for 12 minutes at 350 degrees F. To make the custard cream, combine the egg yolks and sugar in a saucepan and mix well. Add in the cake flour. Slowly add the warm milk a little at a time, constantly stirring until smooth and creamy. Turn on the heat and cook over low heat while stirring constantly to prevent any lumps from forming. Continue cooking until the mixture has thickened. Pour the custard cream directly into the center of the skillet. Decorate with blueberries, strawberries, mint and confectioners’s sugar. Dip the bread into the cream and enjoy!
